This gem of the company's production is obtained from the pressing of a single type of olive: the "Leccino del Molise". A monovarietal oil (monocultivar) is usually an oil with a strong personality, very typical and representative of the territory in which it is produced and, for these reasons, particularly valuable.
The olives are harvested by hand at the right level of ripeness and immediately processed to keep their quality intact.
The Leccino Cultivar is a very versatile variety, which can grow in different areas of Italy (but is also the most widespread variety in the world), adapting perfectly to the soil and climate of the place. In each area it takes on different taste characteristics.
It has a dark green color and a clear appearance due to the clarification obtained by passing it through simple cellulose panels.
The Monocultivar Leccino on the nose is particularly fragrant with particular fruity notes that denote its strong character. The taste is very balanced, slightly bitter and spicy but pleasant on the palate. You can perceive hints of almond, aromatic herbs and artichoke. Its sophisticated taste makes it suitable with grilled meats and fish and legume soups.
Time and constant attention have allowed Monocultivar Leccino to achieve such a refined balance as to be one of the most prized Italian oils.
