This gem of the company's production is obtained by pressing a single type of olive: the "Peranzana or Provenzale di Puglia".

The Peranzana Monocultivar has as its main characteristic a fruity aroma, with vegetal and floral hints. In the mouth it is light and balanced, slightly bitter and spicy, with numerous aromas of tomato, apple and green banana, artichoke and fresh grass. Its sophisticated taste makes it suitable for grilled fish, risottos and fresh cheeses.
